Denver’s Vegan Dining Scene Has Me Planning Dinner
I’m eyeing vegetable-topped pizza, pistachio pesto pasta, and a new restaurant from a food-truck favorite.

I’m adding a few dinner stops to my Denver wish list after reading about the city’s growing vegan dining scene. Soda Club, already a vegan favorite in New York, has opened a Denver location. Its Roman-style pizzas feature toppings like roasted carrots and fried artichokes, while pasta dishes bring in pistachio pesto, fried leeks, and black kale. That’s my kind of vegetable-forward dinner.
I’m also excited about Mother Other, which opened in Denver’s Baker neighborhood in summer 2026. Co-owners chef Alexi Mandolini and beverage director Taylor Herbert previously built a following through pop-ups and supper clubs as The Easy Vegan. They won Food Network’s The Great Food Truck Race in 2023, helping make their restaurant plans possible. I especially like their emphasis on sourcing from local farms and makers.
