Mark Bittman’s New Cookbook Is All About Cooking Plants
I’m excited by the everyday possibilities in How to Cook Everything Vegan, from homemade plant milk to dumplings and desserts.

I love a cookbook that helps with dinner and teaches something useful along the way. Mark Bittman’s How to Cook Everything Vegan, out in October 2026 from Harvest, brings hundreds of from-scratch vegan recipes together with ingredient and technique guides.
The range has my attention: homemade plant milk, rice paper rolls, vegetable sushi, creamy pastas, flatbreads, and pizza. Dessert gets plenty of room, too, with puddings, ice cream, cookies, cakes, and crisps. I’m especially drawn to the mix of everyday basics and projects like dumplings—a little kitchen adventure alongside the weeknight staples.
Beyond individual dishes, Bittman offers guidance on ingredient swaps, changing up seasonings, using leftovers, and cooking with what’s already in the fridge, freezer, or pantry. That’s the kind of practical help I appreciate: ideas that leave room for the ingredients on hand.
